1 cup cucumber, diced 🥒
1 cup cherry tomatoes, halved 🍅
1/2 small red onion, thinly sliced 🧅
1/2 cup Kalamata olives 🫒
1/2 cup feta cheese, crumbled 🧀
Fresh parsley, chopped 🌿

Marinate the chicken: Mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Coat chicken breasts and let marinate for 15 minutes.
Grill the chicken: Heat a grill pan (or outdoor grill) over medium-high heat. Cook chicken for 5–6 minutes per side until golden and fully cooked (internal temp 74°C / 165°F). Let rest 5 minutes, then slice.
Prepare the base: Place rice in serving bowls as the foundation.
Assemble toppings: Arrange cucumber, cherry tomatoes, red onion, olives, and feta around the rice.
Add chicken: Place sliced grilled chicken in the center.
Garnish & serve: Sprinkle with parsley and serve with lemon wedges for squeezing.
