🛒 Ingredients
🍗 2 chicken breasts, cut into bite-sized pieces
🧄 2 garlic cloves, minced
🧂 Salt and pepper, to taste
🌿 1 tbsp chopped fresh parsley (plus extra for garnish)
🍋 Juice of ½ lemon + 3 lemon wedges (for serving)
🫒 1 tbsp olive oil
🧈 1 tbsp unsalted butter
For the creamy lemon herb sauce:
🧄 1 garlic clove, minced
🧈 1 tbsp butter
🥛 ½ cup heavy cream
🌿 1 tbsp chopped parsley
🍋 Zest of ½ lemon + 1 tbsp lemon juice
🧂 Salt & pepper to taste
For the garlic rice:
🍚 1 cup basmati rice
🧈 1 tbsp butter
🧄 1 garlic clove, finely minced
🧂 Salt to taste
💧 2 cups water
👨🍳 Instructions
Cook the rice: In a pot, melt butter and sauté garlic for 1 min. Add rice, salt, and water. Bring to boil, reduce to low, cover, and cook for 15 minutes or until fluffy.
Sear the chicken: Season chicken pieces with salt, pepper, and lemon juice. Heat olive oil and butter in a skillet. Cook chicken 4–5 mins per side until golden and cooked through. Remove and keep warm.
Make the sauce: In the same pan, add butter and garlic. Sauté 30 sec, then add cream, lemon zest, juice, parsley, salt, and pepper. Simmer 3–4 mins until slightly thickened.
Combine: Return chicken to the sauce and toss to coat.
Plate and serve: Spread garlic rice on a platter or bowl. Top with creamy lemon chicken. Garnish with parsley and lemon wedges.
