Mexican Casserole
Ingredients:
1 lb ground beef (or turkey)
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes with green chilies
1 cup corn kernels (fresh or frozen)
2 cups cooked rice (white or brown)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup salsa
1/4 cup chopped fresh cilantro (for garnish)
Salt and pepper to taste
Tortilla chips (optional, for serving)
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C).
Cook Beef: In a large skillet, brown the ground beef with diced onion and minced garlic over medium heat until the meat is no longer pink. Drain any excess fat.
Season: Stir in taco seasoning, black beans, diced tomatoes (with juices), corn, and cooked rice. Mix well and let it simmer for 5 minutes. Season with salt and pepper to taste.
Assemble Casserole: In a greased 9x13-inch baking dish, layer the beef mixture evenly. Pour salsa over the top and sprinkle with cheddar and Monterey Jack cheeses.
Bake: Bake for 25-30 minutes, or until the cheese is bubbly and golden.
