Homemade Keto Sushi Rolls
Ingredients
For the “rice” substitute:
2 cups cauliflower rice (grated or food-processed cauliflower)
2 oz cream cheese
1 tbsp rice vinegar
Pinch of salt
For the filling (choose your favorites):
4 oz smoked salmon or crab (real or imitation, but note imitation has more carbs)
½ avocado, sliced
½ cucumber, julienned
Cream cheese strips
Cooked shrimp or tuna (optional)
For the wrap:
4–5 sheets of nori (seaweed)
For serving:
Soy sauce or coconut aminos
Wasabi
Pickled ginger
Instructions
Prepare the keto “rice”:
Microwave cauliflower rice for 2–3 minutes until tender.
Mix in cream cheese, rice vinegar, and a pinch of salt until sticky like sushi rice. Let cool.
Assemble rolls:
Lay a nori sheet shiny side down on a bamboo sushi mat (or parchment).
Spread a thin layer of cauliflower “rice” over the nori, leaving 1 inch at the top uncovered.
Add fillings (avocado, cucumber, fish, cream cheese, etc.) in a line near the bottom.
Roll tightly:
Use the mat/parchment to roll it up firmly. Wet the edge of the nori with water to seal.
Slice & serve:
Slice with a sharp wet knife into 6–8 pieces.
Serve with soy sauce, wasabi, and pickled ginger.
