Healthy Peanut Butter Greek Yogurt Chocolate Mousse Bites with Gooey Fudge Centers
Ingredients:
- 1/2 cup Greek yogurt
- 1/3 cup peanut butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
- 1/4 cup dark chocolate (melted, for centers)
Directions:
1. In a medium bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and cocoa powder. Mix thoroughly until smooth and creamy.
2. Line a mini muffin tin with paper liners or lightly grease it.
3. Spoon a small amount of the mousse mixture into each muffin cup, filling about halfway.
4. Place a small dollop of melted dark chocolate in the center of each cup to create the gooey fudge center.
5. Spoon the remaining mousse mixture over the chocolate to cover it completely.
6. Smooth the tops with the back of a spoon or a small spatula.
7. Refrigerate the mousse bites for at least 2 hours or until firm.
8. Once set, remove from the muffin tin and serve chilled.
