Lemon Garlic Butter Salmon in Foil with Pineapple
Ingredients:
- 2 salmon fillets
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 lemon, sliced
- 1 cup fresh pineapple chunks
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat your oven to 400°F (200°C). Prepare a large piece of aluminum foil, enough to wrap around the salmon fillets and pineapple.
2. Place the salmon fillets on the center of the foil. Drizzle the olive oil and melted butter over them. Sprinkle the minced garlic, salt, and pepper on top.
3. Layer the lemon slices over the salmon, and arrange the pineapple chunks around them.
4. Fold the sides of the foil over the salmon and pineapple, creating a sealed packet to trap the steam.
5. Place the foil packet on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
6. Carefully open the foil packet (watch out for steam!) and transfer the salmon and pineapple to a plate. Drizzle some juices from the packet over the top for extra flavor.
7. Garnish with chopped fresh parsley before serving.
