Steak & Grain Bowls with Creamy Dill Sauce! 🥩🍚🌿

Ingredients:

For the Steak:

1 lb steak (sirloin, flank, or your favorite cut)
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Grain Bowl:

1 cup cooked grains (quinoa, farro, brown rice, or your favorite)
1 cup roasted tomatoes, halved (cherry or grape tomatoes)
1 cup chopped kale or spinach
1/4 cup crumbled feta cheese (optional)
For the Creamy Dill Sauce:

1/2 cup Greek yogurt or sour cream
1/4 cup chopped fresh dill
2 tablespoons lemon juice
1 clove garlic, minced
Salt and pepper to taste
Instructions:

Prep the Steak: In a small bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Rub the mixture all over the steak. Let it sit at room temperature for 30 minutes or marinate in the refrigerator for up to 24 hours.

Roast the Tomatoes: Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, salt, and pepper. Roast for 20-25 minutes, or until softened and slightly caramelized.

Grill the Steak: Heat your grill to medium-high heat. Grill the steak for 3-5 minutes per side for medium-rare, or adjust cooking time to your preference. Let the steak rest for 5-10 minutes before slicing against the grain.

Make the Sauce: While the steak rests, whisk together Greek yogurt (or sour cream), dill, lemon juice, minced garlic, salt, and pepper in a small bowl.

Assemble the Bowls: In a bowl, combine cooked grains, roasted tomatoes, and kale or spinach. Top with sliced steak and drizzle generously with the creamy dill sauce. Sprinkle with feta cheese, if desired.

Tips & Tweaks:

You can use different vegetables like roasted bell peppers, cucumbers, or avocado for more variety. 🫑🥒🥑
For a spicier kick, add a pinch of red pepper flakes to the steak rub or the sauce. 🔥
If you don't have fresh dill, you can substitute with dried dill. Use about 1 teaspoon.
You can use different types of cheese like goat cheese or crumbled blue cheese instead of feta. 🧀
