Marry Me Halloumi Recipe | One Pan Wonder

This delightful vegetarian twist on the popular "Marry Me Chicken" features halloumi in a creamy, flavorful sauce. The original dish is known for its rich, savory sauce that’s so irresistible, it's said to make someone want to propose after tasting it. This version uses halloumi instead of chicken, making it a perfect choice for vegetarians or anyone looking for a lighter, yet equally delicious meal. With a quick 20-minute cooking time and only one pan required, it’s both easy to make and easy to clean up after. You can serve it with pasta, rice, or potatoes for a satisfying meal.

225g reduced fat halloumi cheese, sliced into thick pieces
Salt and pepper, to taste
1 onion, finely diced
1 clove garlic, minced
150g cherry tomatoes, halved
240ml vegetable stock
120ml reduced fat single cream
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon smoked paprika
2 tablespoons grated parmesan
Handful of fresh spinach

Directions:
1. Season the halloumi slices with salt and pepper.
2. In a large frying pan, cook the halloumi slices until golden brown on both sides. Remove from the pan and set aside.
3. In the same pan, sauté the onion and garlic with a low-calorie cooking spray until softened.
4. Add the cherry tomatoes and cook for a few minutes.
5. Pour in the vegetable stock and bring to a simmer. Let it reduce slightly.
6. Stir in the cream, oregano, smoked paprika, and thyme. Let the sauce thicken.
7. Add the parmesan and stir.
8. Add the spinach and allow it to wilt.
9. Return the halloumi slices to the pan and simmer for another 2 minutes.
