1/3 cup Dijon mustard
1/4 cup mayonnaise
2 tbsp honey 🍯
1 tbsp lemon juice 🍋
1 tsp dried herbs (basil, parsley, or Italian blend)
1 tbsp olive oil

For the Vegetable Base:
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 cups fresh spinach 🥬

Prepare the Chicken: In a bowl, combine olive oil, garlic powder, paprika, thyme, salt, and pepper. Rub the mixture all over the chicken breasts and let sit for 10 minutes.
Grill the Chicken: Heat a grill or skillet over medium-high heat. Cook chicken 5–6 minutes per side or until fully cooked and beautifully charred. Let rest before slicing.
Make the Sauce: In a small bowl, whisk together Dijon mustard, mayo, honey, lemon juice, herbs, olive oil, salt, and pepper until smooth.
Sauté the Vegetables: In a separate pan, heat olive oil, then add bell peppers. Cook 3–4 minutes, then add spinach and cook until wilted. Season with salt and pepper.
Assemble the Dish: Add the veggies to a bowl or plate, top with sliced grilled chicken, then generously drizzle the creamy mustard sauce over everything. Garnish with fresh parsley.
