🍪 Peanut Butter S’mores Sandwich Cookies 🔥
Ingredients:
For the Cookies:
1 cup (230g) unsalted butter, softened
1 cup (200g) granulated sugar
1 cup (220g) light brown sugar, packed
2 large eggs
1 tsp vanilla extract
1 cup (260g) creamy peanut butter
3 cups (360g) all-purpose flour
1 tsp baking soda
½ tsp salt
For the Filling:
1 cup (170g) milk chocolate chips
1½ cups (45g) mini marshmallows
½ cup (130g) peanut butter (for extra richness)
8 whole graham crackers, crushed (about 1 cup)
Instructions:
Make the Cookies:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream butter, granulated sugar, and brown sugar until fluffy. Beat in eggs, vanilla, and peanut butter.
Whisk flour, baking soda, and salt; gradually mix into wet ingredients.
Roll dough into 1-inch balls, place 2 inches apart, and flatten slightly. Bake for 10–12 minutes until edges are golden. Cool completely.
Assemble the Sandwiches:
Melt chocolate chips in 30-second intervals in the microwave. Spread a thin layer on half the cookies.
Sprinkle crushed graham crackers over chocolate, then top with mini marshmallows.
Warm remaining peanut butter slightly for easy spreading; dollop onto the other half of cookies. Press together gently to form sandwiches.
Toast the Marshmallows (Optional):
Use a kitchen torch to lightly toast marshmallow edges for a campfire s’mores effect.
