# Ingredients:

• For the Lamb Curry:

- 2 lbs lamb shoulder or leg (cut into bite-sized pieces)
- 2 tbsp vegetable oil
- 1 large onion (finely chopped)
- 3 garlic cloves (minced)
- 1-inch piece of ginger (minced)
- 2 medium tomatoes (chopped) or 1 cup canned diced tomatoes
- 1/2 cup plain yogurt
- 1 cup water or beef broth
- 1 tsp turmeric powder
- 1 tsp ground coriander
- 1 tsp cumin powder
- 2 tsp garam masala
- 1 tsp chili powder (adjust to taste)
- 1 tsp paprika
- Salt and black pepper to taste

- 1/2 cup coconut milk (for a creamy curry)
- 1/2 cup fresh cilantro (chopped, for garnish)

• Sear the Lamb:

Set the Instant Pot to sauté mode. Heat the vegetable oil and add the lamb pieces in batches. Sear until browned on all sides (about 3-4 minutes per batch). Remove and set aside.

• Sauté the Aromatics:

Close the Instant Pot lid and set the valve to sealing position. Cook on high pressure for 30 minutes.
Allow a natural pressure release for 10 minutes, then manually release any remaining pressure.

If using coconut milk, stir it in at this stage. Set the Instant Pot to sauté mode and simmer for 5 minutes to blend the flavors.
