Traditional Lamb Rogan Josh ๐๐ถ๏ธ
A rich, aromatic Kashmiri curry with tender lamb in a spiced tomato gravyโslow-cooked to perfection. Serve with fluffy basmati rice or warm naan for a taste of the Himalayas!
Ingredients
For the Curry:
๐ Lamb shoulder: 800g, diced (bone-in for extra flavour)

Onions: 2 large, finely sliced

Tinned tomatoes: 400g, blended smooth
๐ง Garlic: 6 cloves, minced
๐ซ Ginger: 2 tbsp, grated
๐ถ๏ธ Kashmiri red chilli powder: 1 tbsp (or ยฝ tbsp paprika + ยฝ tsp cayenne)
๐ฟ Ground coriander: 2 tsp
๐ฟ Ground cumin: 1 tsp
๐ฟ Garam masala: 1 tsp
๐ Bay leaves: 2
๐ฟ Cardamom pods: 4, lightly crushed
๐ฏ Natural yoghurt: 100ml
๐ซ Vegetable oil: 3 tbsp
๐ง Salt: to taste
For the Spice Paste (Optional but Authentic):
๐ถ๏ธ Dried Kashmiri chillies: 4, soaked in hot water
๐ Green cardamom: 4 pods
๐ฟ Fennel seeds: 1 tsp
Method
๐ฅ Brown the lamb: Heat oil in a heavy pot. Sear lamb in batches until browned. Set aside.

Caramelise onions: Fry onions for 10 mins until deep golden. Add garlic, ginger, and whole spices (bay leaves, cardamom).
๐ถ๏ธ Toast spices: Stir in chilli powder, coriander, and cumin. Cook for 1 min until fragrant.

Simmer: Add lamb, tomatoes, and 200ml water. Bring to a boil, then cover and simmer on low for 1.5โ2 hours until lamb is tender.
๐ฅ Finish: Stir in yoghurt and garam masala. Simmer uncovered for 10 mins to thicken.
(For extra depth: Blend soaked Kashmiri chillies, cardamom, and fennel seeds into a paste and add with the tomatoes.)

Tips
