Traditional Lamb Rogan Josh ๐Ÿ–๐ŸŒถ๏ธ
A rich, aromatic Kashmiri curry with tender lamb in a spiced tomato gravyโ€”slow-cooked to perfection. Serve with fluffy basmati rice or warm naan for a taste of the Himalayas!

Ingredients
For the Curry:
๐Ÿ– Lamb shoulder: 800g, diced (bone-in for extra flavour)
๐Ÿง… Onions: 2 large, finely sliced
๐Ÿ… Tinned tomatoes: 400g, blended smooth
๐Ÿง„ Garlic: 6 cloves, minced
๐Ÿซš Ginger: 2 tbsp, grated
๐ŸŒถ๏ธ Kashmiri red chilli powder: 1 tbsp (or ยฝ tbsp paprika + ยฝ tsp cayenne)
๐ŸŒฟ Ground coriander: 2 tsp
๐ŸŒฟ Ground cumin: 1 tsp
๐ŸŒฟ Garam masala: 1 tsp
๐Ÿƒ Bay leaves: 2
๐ŸŒฟ Cardamom pods: 4, lightly crushed
๐Ÿฏ Natural yoghurt: 100ml
๐Ÿซ’ Vegetable oil: 3 tbsp
๐Ÿง‚ Salt: to taste

For the Spice Paste (Optional but Authentic):
๐ŸŒถ๏ธ Dried Kashmiri chillies: 4, soaked in hot water
๐Ÿƒ Green cardamom: 4 pods
๐ŸŒฟ Fennel seeds: 1 tsp

Method
๐Ÿ”ฅ Brown the lamb: Heat oil in a heavy pot. Sear lamb in batches until browned. Set aside.

๐Ÿง… Caramelise onions: Fry onions for 10 mins until deep golden. Add garlic, ginger, and whole spices (bay leaves, cardamom).

๐ŸŒถ๏ธ Toast spices: Stir in chilli powder, coriander, and cumin. Cook for 1 min until fragrant.

๐Ÿ… Simmer: Add lamb, tomatoes, and 200ml water. Bring to a boil, then cover and simmer on low for 1.5โ€“2 hours until lamb is tender.

๐Ÿฅ„ Finish: Stir in yoghurt and garam masala. Simmer uncovered for 10 mins to thicken.

(For extra depth: Blend soaked Kashmiri chillies, cardamom, and fennel seeds into a paste and add with the tomatoes.)
