Creamy Cajun Steak Bites with Rice Skillet

Ingredients:

1 lb steak (sirloin or ribeye), cut into bite-sized pieces
2 tbsp Cajun seasoning
1 tbsp olive oil
2 tbsp butter
1 small onion, finely chopped
3 cloves garlic, minced
1 cup long-grain white rice
1 1/2 cups beef broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:

Season the steak bites with Cajun seasoning, salt, and pepper. Heat olive oil over medium-high heat in a large skillet. Add the steak bites and cook for 4-5 minutes, or until browned and cooked through. Remove the steak from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the garlic and cook for another 1 minute until fragrant. Stir in the rice and cook for 1-2 minutes to toast it lightly.
Pour in the beef broth, bring it to a simmer, and cover the skillet. Cook for 10-12 minutes, or until the rice is tender and the liquid has been absorbed. Stir in the heavy cream and Parmesan cheese, then add the steak back to the skillet. Stir to combine and heat everything through. Taste and adjust the seasoning with more salt and pepper if needed.
Garnish with fresh parsley before serving.
