Greek Meatball Bowl with Tzatziki, Rice & Olives 🍋🍚

🛒 Ingredients:
For the meatballs:
300g ground beef or lamb
1 small onion, finely grated
1 clove garlic, minced
2 tbsp chopped parsley
½ tsp dried oregano
½ tsp cumin
Salt & black pepper
1 tbsp olive oil (for frying)
For the tzatziki:
1 cup Greek yogurt
½ cucumber, grated & squeezed dry
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp chopped dill
Salt to taste
For the bowl:
1 cup cooked basmati rice
4–5 kalamata or green olives
Pickled red onions (2 tbsp)
Lemon wedge
Fresh parsley or dill for garnish
👩🍳 Instructions:
Make the meatballs: In a bowl, mix ground meat with onion, garlic, parsley, oregano, cumin, salt, and pepper. Shape into 10–12 small meatballs.
Cook the meatballs: Heat olive oil in a pan and fry meatballs for 6–8 minutes, turning until browned and fully cooked.
Prepare tzatziki: Mix yogurt with cucumber, garlic, lemon juice, dill, and salt. Chill.
Assemble bowl: Fill bowls with rice. Add meatballs, tzatziki, olives, and pickled onions.
Garnish: Add lemon wedge and a sprinkle of herbs.
