🛒 Ingredients
For the Chicken Curry:
500g chicken breast, cubed
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 red bell pepper, diced
1 tbsp curry powder
1 tsp paprika
200ml coconut milk (or heavy cream)
150ml chicken stock
Salt & pepper
Fresh parsley or cilantro
For the Rice:
250g basmati rice
500ml water
Pinch of salt
👩🍳 Method
Cook rice: Boil basmati in salted water 12–15 mins until fluffy.
Sauté base: Fry onion and garlic in oil. Add chicken cubes and brown on all sides.
Add spices: Stir in curry powder and paprika. Cook 1–2 mins.
Simmer: Add bell pepper, coconut milk, and stock. Simmer 12–15 mins until sauce thickens and chicken is cooked through.
Serve: Plate rice with curry, garnish with parsley or cilantro.
