Coconut Lime Fish with Coconut Rice
Ingredients (Serves 4):
For the Fish:
4 white fish fillets (such as cod, tilapia, or mahi-mahi)
1 tablespoon olive oil or coconut oil
Juice and zest of 1 lime
1/2 teaspoon ground cumin
1/4 teaspoon chili flakes (optional, for heat)
Salt and freshly ground black pepper, to taste
2 tablespoons fresh cilantro or parsley, chopped (for garnish)
For the Coconut Rice:
1 cup jasmine rice (or basmati rice)
1 can (400 ml) full-fat coconut milk
1/2 cup water
1/2 teaspoon salt
1 tablespoon shredded coconut (optional, for texture)
1 tablespoon lime juice
1 tablespoon fresh cilantro or parsley, chopped (for garnish)
Instructions:
Prepare the Coconut Rice:
Rinse the rice under cold water until the water runs clear. This removes excess starch and helps the rice cook up fluffy.
In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Stir well and bring to a boil over medium-high heat.
Once it reaches a boil, reduce the heat to low, cover, and let the rice simmer for 15-18 minutes, or until the rice is tender and the liquid has been absorbed.
Once cooked, remove from the heat and fluff the rice with a fork. Stir in the lime juice and shredded coconut (if using) for added flavor and texture. Set aside.
Cook the Fish:
While the rice is cooking, heat the olive oil or coconut oil in a large skillet over medium heat.
In a small bowl, combine the lime juice and zest, ground cumin, chili flakes (if using), salt, and pepper.
Season the fish fillets with the lime mixture, ensuring both sides are evenly coated.
Add the fish fillets to the heated skillet and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
Assemble and Serve:
To serve, place a generous scoop of coconut rice on each plate. Arrange the cooked fish fillets on top of the rice.
Garnish with chopped cilantro or parsley, and add a final squeeze of lime juice for extra freshness.
Serve with lime wedges on the side for those who want an extra burst of citrus flavor.
Tips:
Make it Spicy: For a bit of heat, add more chili flakes to the fish seasoning or drizzle the fish with a spicy sauce like Sriracha before serving.
Vegetable Additions: Add sautéed vegetables like bell peppers, zucchini, or steamed broccoli on the side for a complete meal.
Alternative Fish: This recipe works well with other fish varieties such as snapper, haddock, or trout.
Rice Variation: You can also use brown rice for a heartier option or quinoa for a gluten-free alternative.
