Easy Mushroom Chicken Recipe for Dinner
Ingredients:
4 boneless, skinless chicken breasts
8 ounces mushrooms, sliced
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped for garnish
Directions:
Begin by heating the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Once done, remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sliced mushrooms. Sauté for about 5 minutes, or until the mushrooms are tender and golden. Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for 3-4 minutes to reduce slightly.
Next, stir in the heavy cream and dried thyme, mixing well. Return the chicken to the skillet, coating it with the creamy mushroom sauce. Let everything simmer together for an additional 5 minutes, allowing the flavors to meld.
Once ready, garnish with freshly chopped parsley before serving. This dish pairs wonderfully with rice or pasta for a complete meal.
