Sweet Chili Pineapple Sauce
Ingredients:
1.5 cups white sugar
1 cup pineapple juice
1/2 cup rice vinegar or apple cider vinegar
1 tbsp garlic, minced
1–2 tbsp red chili flakes (use more for extra heat)
1 tbsp tomato ketchup (optional)
1 tsp salt (adjust to taste)
2 tbsp cornflour (cornstarch)
4 tbsp cold water
Instructions:
Boil the base: In a large saucepan, combine sugar, pineapple juice, vinegar, and salt. Bring to a boil over medium heat.
Add flavor: Stir in chili flakes, garlic, and ketchup. Continue boiling for about 5 minutes.
Thicken the sauce: Mix cornflour and cold water to create a slurry. Lower the heat and slowly stir the slurry into the sauce to avoid lumps.
Simmer and finish: Cook the sauce on low heat, stirring occasionally, until it thickens to your preferred consistency. (It will thicken more as it cools.)
Cool and store: Let the sauce cool completely, then transfer to a sterilized bottle or jar. Keep refrigerated.
Notes:
Adjust the sugar based on the sweetness of your pineapple juice.
For an authentic kick, substitute chili flakes with finely minced red Thai chilies.
This sauce is perfect for spring rolls, grilled meats, or stir-fry glazes.
