Peanut Butter Cup Cupcakes 🥜🍫
Ingredients
For the Chocolate Cupcakes:
1 cup (125g) all-purpose flour
½ cup (45g) unsweetened cocoa powder
¾ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (115g) unsalted butter, melted
¾ cup (150g) granulated sugar
½ cup (100g) brown sugar
2 large eggs
1 tsp vanilla extract
½ cup (120ml) buttermilk
½ cup (120ml) hot coffee or hot water
For the Peanut Butter Filling:
½ cup (120g) creamy peanut butter
¼ cup (30g) powdered sugar
1 tbsp unsalted butter, softened
For the Chocolate Ganache:
¾ cup (180ml) heavy cream
6 oz (170g) semi-sweet chocolate, chopped
For Garnish:
Crushed peanut butter candy (e.g., Butterfinger, Reese’s)
Mini peanut butter cups (optional)
Instructions
Making the Cupcakes:
Preheat Oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Mix Dry Ingredients – In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Mix Wet Ingredients – In another bowl, beat melted butter, sugars, eggs, and vanilla until smooth.
Combine – Add the dry ingredients alternately with buttermilk, then stir in hot coffee.
Bake – Fill cupcake liners ¾ full and bake for 18-20 minutes. Let cool completely.
Making the Peanut Butter Filling:
Mix peanut butter, powdered sugar, and butter until smooth.
Scoop the center out of each cupcake and pipe or spoon the filling inside.
Making the Chocolate Ganache:
Heat heavy cream in a small saucepan until it just starts to simmer.
Pour over chopped chocolate and let sit for 2 minutes, then stir until smooth.
Let cool slightly before frosting.
Assembling the Cupcakes:
Spread or pipe the ganache over the filled cupcakes.
Sprinkle with crushed peanut butter candy and top with a mini peanut butter cup if desired.
