Thai Chicken Meatball Curry
This vibrant Thai Chicken Meatball Curry combines tender chicken meatballs with rich coconut milk and aromatic red curry paste, making for a comforting and flavorful dish.
Ingredients:
1 lb ground chicken
1 small zucchini, shredded
2 green onions, chopped
2 shallots, chopped
2 cloves garlic, grated
1 red bell pepper, sliced
2 tsp - 1 tbsp grated ginger
1/4 tsp cayenne pepper
Black pepper, to taste
2 tsp - 3 tbsp soy sauce or tamari
3 tbsp olive oil
2 tbsp salted butter
3 tbsp Thai red curry paste
1 can (14 oz) coconut milk
1/4 cup chopped cilantro
Fresh basil and lime wedges, for serving
Instructions:
Prepare the Meatballs:
In a large bowl, mix together the ground chicken, shredded zucchini, chopped green onions, 1 chopped shallot, grated garlic, grated ginger, cayenne pepper, black pepper, and soy sauce.
Form the mixture into small meatballs, using oiled hands to prevent sticking.
Sear the Meatballs:
Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
Add the meatballs to the skillet and cook until browned on all sides, about 4-5 minutes. Once browned, set the meatballs aside.
Make the Curry Base:
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the remaining chopped shallot, grated garlic, and grated ginger. Cook for 2 minutes until fragrant.
Add the sliced bell pepper, butter, and red curry paste. Cook for another 2 minutes, stirring frequently to incorporate the flavors.
Simmer the Curry:
Pour in the coconut milk and 3 tablespoons of soy sauce. Stir everything together and bring to a gentle simmer.
Add the seared meatballs back into the skillet. Let the curry simmer for 5 minutes, or until the meatballs are fully cooked through.
Finish and Serve:
Stir in the chopped cilantro for a burst of freshness.
Serve the curry over rice, garnished with fresh basil and lime wedges for a zesty finish.
