Healthy & Flavorful Vegetable Korma 💛🍲
Ingredients:
- 1 cup mixed vegetables (carrots, peas, cauliflower, green beans)
- 1 small onion, diced
- 2 garlic cloves, minced
- 1-inch piece of ginger, minced
- 1 cup coconut milk
- 1½ cups vegetable broth
- 1 tsp ground turmeric
- 1 tsp garam masala
- ½ tsp ground cumin
- 2 tbsp cashew cream (or soaked blended cashews)
- 2 tbsp olive oil
- Salt and pepper to taste
Directions:
1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, and ginger until fragrant.
2. Stir in turmeric, garam masala, and cumin. Cook for 1 minute.
3. Add mixed vegetables, coconut milk, and vegetable broth. Bring to a gentle boil.
4. Reduce heat and simmer for 15–20 minutes until vegetables are tender. Stir in cashew cream and season with salt and pepper.
5. Serve hot with basmati rice or gluten-free flatbread.
