Korean BBQ Beef Bowl with Kimchi & Sesame-Scallion Sauce 🇰🇷
Ingredients:
For the Beef:
1 pound boneless, skinless beef (flank steak, skirt steak, or sirloin tip), thinly sliced
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon gochujang (Korean chili paste)
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Kimchi:
1 (16 ounce) jar kimchi, drained
For the Rice:
1 cup cooked rice
For the Sesame-Scallion Sauce:
1/2 cup mayonnaise
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon chopped scallions
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Marinate the Beef: In a bowl, combine beef with soy sauce, sesame oil, gochujang, garlic powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
Grill the Beef: Preheat grill to medium-high heat. Grill the beef for 2-3 minutes per side, or until cooked through. Let rest for 5 minutes before slicing.
Make the Sesame-Scallion Sauce: In a small bowl, whisk together mayonnaise, soy sauce, rice vinegar, sesame oil, scallions, garlic, salt, and pepper.
Assemble the Bowls: Divide cooked rice among bowls. Top with grilled beef, kimchi, and drizzle generously with the Sesame-Scallion Sauce.
Tips:
You can use any type of beef you like for this recipe.
For a spicier sauce, add more gochujang or a pinch of red pepper flakes.
Serve the bowls with your favorite side dishes, such as edamame or a side salad.
