Directions:
Prepare the Rice:
Rinse the rice under cold water. In a saucepan, bring 2 cups of water or chicken broth to a boil. Add the rice and a pinch of salt, cover, and reduce heat to low. Cook for 15 minutes until tender. Fluff with a fork and set aside.
Roast the Potatoes:
Preheat your oven to 400°F (200°C). Toss the quartered potatoes with olive oil, parsley, garlic powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25 minutes, flipping halfway through, until golden and crispy.
Cook the Chicken:
Heat olive oil in a skillet over medium heat. Rub the chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
Sear the chicken for 5–6 minutes per side until golden brown and cooked through (internal temperature should be 165°F/74°C). Let rest for 5 minutes, then slice.
Steam the Broccoli:
Bring a pot of water to boil. Place broccoli florets in a steamer basket over the boiling water, cover, and steam for 5 minutes until bright green and tender. Toss with butter or olive oil, and season with salt and pepper.
Assemble the Plate:
Serve the sliced chicken alongside the roasted potatoes, steamed broccoli, and rice. Garnish with chopped parsley for a fresh touch.
