Peanut Butter Lunch Lady Cookie Bars
Ingredients:
- 1 cup peanut butter (creamy or chunky)
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup quick oats
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped peanuts (optional)
Directions:
1. Preheat oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.
2. In a large bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the quick oats, chocolate chips, and chopped peanuts if using.
7. Spread the batter evenly into the prepared baking pan and smooth the top.
8. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
9. Allow the bars to cool completely in the pan before cutting into squares.
