These No-Bake M&M Cookie Dough Bars are soft, chewy, and packed with colorful M&M candies and chocolate chips! They’re egg-free, require no oven, and are perfect for a quick, indulgent treat.
Ingredients
For the Cookie Dough Base:
1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
¼ cup milk (or heavy cream)
1 tablespoon vanilla extract
2 ½ cups all-purpose flour (heat-treated, see notes)
½ teaspoon salt
1 cup mini chocolate chips
¾ cup M&M candies
For the Chocolate Ganache Topping:
1 ½ cups semi-sweet chocolate chips
½ cup heavy cream
½ teaspoon vanilla extract
½ cup M&M candies (for garnish)
Instructions
Step 1: Heat-Treat the Flour (Important for safety!)
Preheat your oven to 300°F (150°C).
Spread the flour evenly on a baking sheet.
Bake for 5-7 minutes, stirring halfway through. Let it cool before using.
Alternatively, microwave the flour in 30-second intervals, stirring between each, until it reaches 165°F (74°C).
Step 2: Make the Cookie Dough Base
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
Add milk and vanilla extract, and mix until combined.
Gradually mix in the heat-treated flour and salt until fully incorporated.
Stir in the mini chocolate chips and M&Ms until evenly distributed.
Press the cookie dough mixture firmly into a 9x9-inch baking pan lined with parchment paper.
Step 3: Prepare the Chocolate Ganache
In a microwave-safe bowl, heat heavy cream until hot but not boiling (about 45 seconds).
Pour over the semi-sweet chocolate chips and let sit for 1-2 minutes.
Stir until smooth, then mix in the vanilla extract.
Pour the ganache over the cookie dough base and spread evenly.
Sprinkle extra M&Ms on top for decoration.
Step 4: Chill and Serve
Cover and refrigerate for 2 hours, or until set.
Once firm, lift out of the pan using the parchment paper and slice into bars.
