🇮🇹 Risotto al Limone (Lemon Risotto)
Bright, creamy, and elegant—this lemon-infused risotto is a refreshing twist on a classic Italian dish!
📝 Ingredients:
• 1 cup Arborio rice
• 1 lemon, zested and juiced
• 1/4 cup Parmesan cheese, grated
• 1/2 small onion, finely chopped
• 3 cups vegetable or chicken broth, warm
• 2 tbsp butter
• 1 tbsp olive oil
• Salt and pepper to taste
• Fresh parsley (optional)
👩🍳 Instructions:
1️⃣ In a pot, heat olive oil and 1 tbsp butter. Sauté onion until soft.
2️⃣ Add Arborio rice and toast for 1–2 minutes.
3️⃣ Gradually add warm broth, 1 ladle at a time, stirring continuously until absorbed before adding more.
4️⃣ After 15–18 minutes, when the rice is creamy and al dente, stir in lemon juice, zest, and Parmesan.
5️⃣ Add the remaining butter, season to taste, and mix well.
6️⃣ Serve hot with a sprinkle of fresh parsley if desired.
