* 1 head cauliflower (about 4 cups processed)
2 eggs, lightly beaten
1/2 cup finely grated Parmesan
* 1/2 tsp. oregano
1 1/2 cups shredded white Cheddar
INSTRUCTIONS:
1. Cut cauliflower into florets and process until rice-like.
2. Mix cauliflower, eggs, Parmesan, oregano, salt, and pepper.
3. Heat skillet, form patties, and cook until golden.
4. Add cheese, top with another patty, and melt.
