Freshly Baked Stuffed Bell Peppers

A healthy recipe with great flavors that you and your family will surely enjoy!

Recipe:
1 pound ground meat (beef or turkey)
1 onion diced
3 garlic cloves minced
1 tsp salt
1 tsp Italian seasoning
1/2 tsp black pepper
1 cup rice uncooked
1 cup beef broth or chicken broth
1 big can diced tomatoes (28 oz)
2 cups shredded mozzarella cheese

Steps:
Preheat oven to 350 F.
Wash and clean bell peppers. Sliced on top and remove seeds. Place in baking sheet (I line with parchment paper) and bake for 20 minutes.

While baking, cooked the filling.
In a large pan, brown the beef. Add onions and garlic and saute till translucent. Add rice. Mix well. Add broth and diced tomatoes. Add all the seasoning. Let it boils and simmer in medium heat till the rice is cooked. Add 1 1/2 cups of mozzarella cheese. Mix well with the rice mixture. Remove from heat.

Assembly the stuffed peppers:
Scoop and fill the mixture into the bell peppers. Top with shredded cheese. Baked for 20 minutes in the oven.
