🍛 Mutton Curry Recipe (Restaurant-Style) 🍖
📝 Ingredients
🔸 For Marination:
🥩 500g mutton (bone-in for extra flavor)
🥛 ½ cup yogurt
🧄 1 tbsp ginger-garlic paste
🌿 1 tsp turmeric powder
🌶️ 1 tsp red chili powder
🧂 1 tsp salt
🍋 1 tbsp lemon juice
🔹 For the Curry:
🛢️ 3 tbsp mustard oil or ghee
🍃 2 bay leaves
🌿 1-inch cinnamon stick
🟤 3-4 cloves
💚 2 green cardamoms
⚫ 1 black cardamom
🌱 1 tsp cumin seeds
🧅 2 large onions (finely chopped)
🧄 2 tbsp ginger-garlic paste
🍅 2 tomatoes (pureed)
🌿 1 tsp coriander powder
🌱 1 tsp cumin powder
🌶️ 1 tsp garam masala
⚫ ½ tsp black pepper powder
🌶️ 1 tsp Kashmiri red chili powder (for color)
🍃 1 tsp kasuri methi (dried fenugreek leaves)
💧 2 cups water (adjust as needed)
🌿 Fresh coriander leaves for garnish

👨🍳 Instructions
1️⃣ Marinate the Mutton:
In a bowl, mix mutton 🥩, yogurt 🥛, ginger-garlic paste 🧄, turmeric 🌿, red chili powder 🌶️, salt 🧂, and lemon juice 🍋.
Cover and marinate for at least 2 hours (overnight for best flavor).
2️⃣ Cook the Base:
Heat mustard oil/ghee 🛢️ in a heavy-bottomed pan or pressure cooker.
Add bay leaves 🍃, cinnamon 🌿, cloves 🟤, green & black cardamoms 💚⚫, and cumin seeds 🌱. Sauté until aromatic.
Add chopped onions 🧅 and sauté until golden brown.
Stir in ginger-garlic paste 🧄 and cook until the raw smell disappears.
Add tomato puree 🍅 and cook until oil separates.
3️⃣ Cook the Mutton:
Add coriander powder 🌿, cumin powder 🌱, garam masala 🌶️, black pepper ⚫, and Kashmiri chili powder 🌶️. Mix well.
Add marinated mutton 🥩 and cook on high flame 🔥 for 5-7 minutes to seal the juices.
Pour in 2 cups of water 💧, cover, and let it simmer for 45-50 minutes (or pressure cook for 4-5 whistles).
4️⃣ Final Touch:
Crush kasuri methi 🍃 and add to the curry.
Adjust salt 🧂 and simmer for another 5 minutes.
Garnish with fresh coriander leaves 🌿.
