Meatballs with Roasted Veggies & Rice 🍠

📝 Ingredients:
For the Meatballs:
1/2 lb ground turkey or beef
1/4 cup breadcrumbs
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
1 tablespoon olive oil
For the Roasted Veggies:
1/2 sweet potato (cubed)
1/2 zucchini (sliced)
1/2 red bell pepper (chopped)
1/4 onion (sliced)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Rice:
1 cup cooked white or brown rice
🍽️ Step by Step:
1️⃣ Prepare the Meatballs:
Preheat oven to 400°F (200°C).
Mix ground meat, breadcrumbs, egg, garlic powder, onion powder, salt, pepper, and Italian seasoning in a bowl.
Form into small meatballs and place on a baking sheet.
Drizzle with olive oil and bake for 20 minutes until golden brown.
2️⃣ Roast the Veggies:
Toss sweet potatoes, zucchini, bell pepper, and onion with olive oil, garlic powder, paprika, salt, and pepper.
Spread on a baking sheet and roast for 25 minutes until tender and caramelized.
3️⃣ Cook the Rice:
While everything bakes, cook rice according to package instructions.
4️⃣ Assemble & Serve:
Plate rice, top with roasted veggies, and add meatballs on the side.
