Smothered Chicken and Rice 🍗🍚
A delicious and hearty dish perfect for family dinners.
📋 Ingredients
- 4 boneless, skinless chicken breasts (or thighs), cut into chunks
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup diced tomatoes (optional)
- 1 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper (adjust to taste)
📝 Instructions
1. In a large skillet, heat olive oil over medium heat.
2. Add the diced onion and garlic, and sauté until the onion is translucent.
3. Add the chicken pieces to the skillet and cook until browned.
4. Pour in the chicken broth, heavy cream, and diced tomatoes if using.
5. Stir in paprika, thyme, and cayenne pepper.
6. Bring to a simmer, cover, and let cook for about 20-25 minutes, or until chicken is cooked through.
7. Serve over cooked rice.
