🇮🇹 Risotto ai Carciofi (Artichoke Risotto)
Creamy and delicate risotto with tender artichokes and nutty Parmesan—simple yet elegant! 🌿🍚🧀
Ingredients:
• 1 cup Arborio rice
• 2 artichokes, cleaned and chopped
• 1/4 cup Parmesan cheese
• 2 tbsp olive oil
• 1 small onion, finely chopped
• 1 clove garlic, minced
• 1/2 cup white wine (optional)
• 3 cups vegetable broth, warm
• Salt and pepper, to taste
• Chopped parsley and lemon zest (for garnish)
Instructions:
1. 🧄 Sauté onion and garlic in olive oil until soft.
2. 🌿 Add artichokes and cook for 5–6 min.
3. 🍚 Stir in Arborio rice, toast for 1–2 min.
4. 🍷 Pour in white wine (if using), stir until absorbed.
5. 🥄 Gradually add warm broth, 1 ladle at a time, stirring constantly.
6. 🧀 Stir in Parmesan, season with salt and pepper.
7. 🍋 Garnish with lemon zest and parsley—serve hot!
