Peanut butter cup cookies
ingredients
▢ 1 ¾ cups all-purpose flour
▢ ½ teaspoon baking soda
▢ ½ teaspoon salt
▢ ½ cup unsalted butter, softened
▢ ½ cup granulated sugar
▢ ½ cup packed brown sugar
▢ ½ cup creamy peanut butter
▢ 1 large egg
▢ 1 teaspoon vanilla extract
▢ about 40 mini reese’s peanut butter cups, unwrapped
instructions
1. preheat oven to 350°f (175°c). lightly grease a mini muffin tin.
2. in a small bowl, whisk together flour, baking soda, and salt. set aside.
3. in a large bowl, cream together butter, granulated sugar, brown sugar, and peanut butter until fluffy.
4. beat in egg and vanilla until combined.
5. gradually add in the flour mixture until fully incorporated.
6. roll dough into 1-inch balls and place each into a mini muffin cup.
7. bake for 8–10 minutes, until lightly golden.
8. remove from oven and immediately press a mini peanut butter cup into the center of each cookie.
9. let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
