500 g mutton (cut into medium-sized pieces)

3 tbsp oil (Emami Healthy & Tasty Ultra Lite Refined Soyabean Oil recommended)

2 large onions, finely sliced

2 medium tomatoes, finely chopped or pureed

2 tbsp ginger-garlic paste

1/2 cup yogurt, whisked

2 green chilies, slit

1 tbsp red chili powder

1 tsp turmeric powder

1 tbsp coriander powder

1 tsp cumin powder

1/2 tsp garam masala powder

1 tsp whole spices (bay leaves, cloves, cardamom, and cinnamon)

1 tsp cumin seeds

Salt to taste

2 cups water (adjust for consistency)

Fresh coriander leaves, chopped (for garnish)

Instructions:

1. Marinate the Mutton:

Wash the mutton and pat it dry.

Marinate it with yogurt, turmeric powder, red chili powder, and salt. Set aside for at least 30 minutes (or up to 2 hours for better flavor).

2. Prepare the Curry Base:

1. Heat oil in a heavy-bottomed pan or pressure cooker.

2. Add cumin seeds and whole spices (bay leaves, cloves, cardamom, and cinnamon). Sauté until aromatic.

3. Add onions and sauté until golden brown.

4. Mix in ginger-garlic paste and cook until the raw smell disappears.

5. Add chopped or pureed tomatoes. Cook until the oil separates and the mixture thickens.
