Ingredients
For the Halibut:
4 halibut fillets (6 oz each)
2 tablespoons olive oil
Salt and black pepper, to taste
For the Lemon Butter Sauce:
4 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon fresh parsley, chopped
1/2 teaspoon dried thyme
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
For Garnish:
Lemon wedges
Additional fresh parsley, chopped
Instructions
Prepare the Halibut:
Preheat your grill to medium-high heat.
Brush both sides of the halibut fillets with olive oil and season with salt and black pepper.
Make the Lemon Butter Sauce:
In a small saucepan, melt the butter over medium heat.
Add minced garlic and cook for about 1 minute, until fragrant.
Stir in fresh lemon juice, lemon zest, chopped parsley, dried thyme, and red pepper flakes (if using). Remove from heat and set aside.
Grill the Halibut:
Place the halibut fillets on the grill. Cook for 4-5 minutes per side, or until the fish flakes easily with a fork. The internal temperature should reach 145°F (63°C).
Avoid flipping the fillets too often to ensure they remain intact and have nice grill marks.
Serve:
Transfer the grilled halibut fillets to a serving platter.
Drizzle the lemon butter sauce over the fillets.
Garnish with lemon wedges and additional chopped parsley.
