🛒 Ingredients
For the Chicken:
🐔 2 chicken breasts, cut into cubes
🧂 ½ tsp salt
⚫ ½ tsp black pepper
🫒 1 tbsp oil
For the Sauce:
🥢 3 tbsp soy sauce
🍯 1 tbsp honey (or brown sugar)
🍋 1 tsp rice vinegar (or lime juice)
🧄 1 garlic clove, minced
🧅 1 small shallot or onion, finely chopped
🌽 1 tsp cornstarch + 2 tbsp water (slurry)
For the Rice & Veggies:
🍚 1 cup jasmine or basmati rice
💧 2 cups water
🧂 Pinch of salt
🥦 2 cups broccoli florets
🌿 1 tbsp chopped green onions (for garnish)
👨🍳 Instructions
Cook rice: Rinse rice and boil with salted water (2 cups) for 12–15 minutes until fluffy. Keep warm.
Steam broccoli: Steam florets for 4–5 minutes until tender but still bright green.
Cook chicken: Heat oil in a skillet, season chicken with salt & pepper, and sauté 6–8 minutes until golden and cooked through. Remove and set aside.
Make sauce: In the same pan, sauté onion and garlic 2 minutes. Add soy sauce, honey, and vinegar. Stir in cornstarch slurry and cook until glossy and thickened.
Combine: Return chicken to the sauce, toss to coat evenly.
Assemble: Serve rice topped with green onions, add steamed broccoli, and spoon glazed chicken alongside.
🔁 Notes & Variations
Add sesame seeds on top for crunch.
Use chicken thighs for juicier meat.
Spice it up with chili flakes or sriracha.
