Ingredients:
For the Chicken and Veggies:
🍗 Chicken breast – 1 (cubed)
🛢️ Olive oil – 2 tbsp
🧄 Garlic – 3 cloves (minced)
🧅 Red onion – 1/2 cup (sliced)
🥦 Broccoli florets – 1 cup
🥕 Carrots – 1 cup (sliced)
🌿 Dried thyme or Italian seasoning – 1 tsp
🧂 Salt and pepper – to taste
🥫 Soy sauce – 1 tbsp (optional)
For the Rice:
🍚 Cooked brown or white rice – 1 cup
Directions:
Cook the Chicken:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add cubed chicken, salt, pepper, and thyme. Cook for 6–8 minutes until golden and cooked through. Remove and set aside.
Sauté the Veggies:
In the same skillet, add the remaining olive oil, garlic, red onion, broccoli, and carrots. Stir-fry for 6–8 minutes until tender but crisp.
Combine Chicken and Veggies:
Return the cooked chicken to the skillet. Toss everything together with soy sauce (if using) and adjust seasoning with salt and pepper.
Assemble the Plate:
Serve the chicken stir-fry alongside cooked rice for a hearty and balanced meal.
Notes/Variations:
Swap carrots and broccoli with zucchini, bell peppers, or green beans for variety.
