Ingredients (Serves 2β3)
π Garlic-Oregano Grilled Chicken Slices
2 boneless, skinless chicken breasts, sliced
2 tbsp olive oil
3 cloves garlic, minced π§
1 tbsp fresh oregano, chopped πΏ
Salt & freshly cracked black pepper to taste
π₯ Crispy Herb-Roasted Potatoes
2 medium Yukon Gold potatoes, cut into Β½-inch cubes
1 tbsp olive oil
2 cloves garlic, minced
Β½ tsp dried rosemary
Β½ tsp dried thyme
Salt & freshly cracked black pepper to taste
π Garlic & Herb-Infused Rice
1 cup long-grain rice
2 cups chicken broth (or water)
1 tbsp olive oil
1 clove garlic, minced
Β½ tsp dried oregano
Salt to taste
π₯£ Creamy Basil Pesto Yogurt Sauce
ΒΌ cup fresh basil leaves πΏ
2 tbsp grated Parmesan cheese π§
1 clove garlic, minced
2 tbsp olive oil
Β½ cup plain Greek yogurt
1 tbsp lemon juice π
Salt & freshly cracked black pepper to taste

Instructions
1. Marinate & Grill the Chicken
In a bowl, toss chicken slices with olive oil, minced garlic, oregano, salt, and pepper.
Heat a grill pan or outdoor grill to medium-high heat. Grill chicken slices for 2-3 minutes per side, or until cooked through and lightly charred. Set aside.
2. Prepare the Crispy Herb-Roasted Potatoes
Preheat oven to 425Β°F (220Β°C).
In a bowl, toss potato cubes with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20β25 minutes, or until golden brown and crispy, flipping halfway through.
3. Cook the Garlic & Herb-Infused Rice
Heat olive oil in a saucepan over medium heat. Add minced garlic and oregano and cook until fragrant, about 30 seconds.
Add rice and stir for 1 minute. Pour in chicken broth (or water) and add salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until all the liquid is absorbed and the rice is tender.
4. Prepare the Creamy Basil Pesto Yogurt Sauce
In a food processor or blender, combine basil leaves, Parmesan cheese, minced garlic, and olive oil. Blend until mostly smooth.
In a separate bowl, whisk together the blended pesto and Greek yogurt until well combined. Stir in lemon juice and season with salt and pepper to taste.
5. Assemble & Serve
Serve the garlic & herb-infused rice topped with the garlic-oregano grilled chicken slices and crispy herb-roasted potatoes on the side.
Drizzle generously with the creamy basil pesto yogurt sauce.
