- 1/4 tsp black pepper
- 1.5 cups vegetable stock
- 1.5 tbsp flour (use gluten-free flour if needed)
- 2-3 tbsp water or stock (for slurry)
- 1.5 cups cooked brown lentils (canned or pre-cooked)
- 1/2 cup sour cream (or vegan sour cream)
- Fresh parsley, chopped (for garnish)

Directions:
1. Start by heating the olive oil in a deep pan over medium heat. Toss in the chopped onion and half a teaspoon of salt. Let it cook for about 5-6 minutes until it turns golden brown and fragrant.
2. Meanwhile, melt the butter in a separate pan over medium-high heat. Add the mushrooms along with the remaining salt, sautéing them for about 5-6 minutes until they’re beautifully browned.
3. Once the mushrooms are ready, combine them with the onions in the first pan. Stir in the chopped garlic, Dijon mustard, and black pepper. Pour in the vegetable stock, letting it simmer for 5 minutes to blend those lovely flavors.
4. In a small bowl, prepare your slurry by mixing the flour with 2-3 tablespoons of water or stock until smooth.
5. Now it's time to thicken up that sauce! Stir the cooked lentils into the pan, and gradually add your slurry while stirring continuously. Watch as your sauce thickens to perfection.
6. Lower the heat and gently stir in the sour cream until it’s fully blended into the sauce. Taste and adjust the seasoning if desired.
