Hearty Grilled Chicken Bowl with Roasted Potatoes, Mushrooms & Rice 🌿

🛒 Ingredients
For the Chicken:
🐔 2 boneless, skinless chicken breasts
🫒 1 tbsp olive oil
🧂 Salt & pepper
🌿 1/2 tsp dried thyme or Italian seasoning
For the Sides:
🥔 1 cup baby potatoes, halved
🍄 1 cup mushrooms, sliced
🥕 1 cup mixed vegetables (e.g., green beans, carrots, onions)
🧈 1 tbsp butter
🍚 1 cup basmati or jasmine rice
💧 2 cups water
🌿 Chopped parsley (for garnish)
👩🍳 Instructions
Roast the potatoes: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt & pepper. Roast 25–30 min until golden.
Cook the rice: Rinse rice. Bring water to boil, add rice and a pinch of salt. Simmer covered for 12–15 mins. Fluff with a fork.
Grill the chicken: Season chicken with oil, thyme, salt & pepper. Grill on medium heat for 6–7 min per side. Rest, then slice.
Sauté veggies & mushrooms: In a skillet, melt butter. Cook mushrooms until browned (5–6 mins). Add mixed vegetables and sauté 5 mins more.
Assemble the bowl: Layer rice, sliced chicken, roasted potatoes, mushrooms, and veggies. Garnish with fresh parsley.
