Steak with Creamy Mushroom Sauce & Asparagus
This dish combines tender, juicy steak with a rich, creamy mushroom sauce and fresh, crisp asparagus. It's perfect for a special dinner or a cozy night in.
Ingredients:
2 boneless, skinless steaks (ribeye, filet mignon, or New York strip)
Salt and pepper, to taste
2 tbsp vegetable oil
2 cloves garlic, minced
8 oz (225 g) fresh mushrooms, sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tbsp butter
1 tsp dried thyme
1 tsp dried rosemary
1 lb (450 g) asparagus, trimmed
1 lemon, cut into wedges (for serving)
Chopped fresh parsley (for garnish)
Instructions:
Season the Steak:
Pat the steaks dry with paper towels. Season both sides generously with salt and pepper.
Cook the Steak:
Heat the vegetable oil in a large skillet over medium-high heat. Add the steaks and cook for 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness. Remove the steaks from the skillet and let them rest for 5 minutes to retain their juices.
Prepare the Asparagus:
While the steak is resting, heat a bit of oil in another skillet over medium heat. Add the trimmed asparagus and cook for 3-4 minutes until tender but still crisp. Season with salt and pepper to taste. Squeeze a bit of lemon juice over the asparagus for added flavor.
Make the Creamy Mushroom Sauce:
In the same skillet used for the steak, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the sliced mushrooms and cook until they are tender and have released their moisture, about 5-7 minutes.
Stir in the heavy cream, grated Parmesan cheese, dried thyme, and dried rosemary. Cook for another 3-4 minutes until the sauce is thickened and smooth. Season with salt and pepper to taste.
Serve:
Slice the rested steak and serve it hot with the creamy mushroom sauce poured over the top. Arrange the asparagus on the side. Garnish with chopped fresh parsley and a wedge of lemon.
