Grilled Chicken & Sweet Potato Power Bowl 🥗🍠🍗

🌟 Ingredients:
2 chicken breasts, diced 🍗
1 large sweet potato, cubed 🍠
1 cup cherry tomatoes, halved 🍅
2 handfuls of kale or spinach 🥬
1 tbsp olive oil 🫒
1/2 tsp paprika
Salt & pepper to taste 🧂
For topping:
2 tbsp ranch or yogurt dressing 🥣
1 tbsp balsamic glaze (or balsamic reduction) 🍷
🔥 Instructions:
Preheat oven to 200 °C / 400 °F. Toss sweet potatoes with olive oil, salt, pepper, and paprika, then roast on a baking tray for 20–25 minutes. In a pan, sauté or grill chicken until golden and fully cooked, seasoning with salt and pepper. Sauté kale lightly or massage it raw with a bit of oil. Assemble the bowl: layer sweet potatoes, chicken, kale, and cherry tomatoes. Drizzle with ranch and balsamic glaze. Serve warm or chilled!
