Honey Sesame Chicken Rice Bowl

Ingredients:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
1/2 cup soy sauce
1/4 cup honey
2 tbsp rice vinegar
2 tbsp sesame oil
1 tbsp cornstarch
1 tsp grated ginger
1 tsp minced garlic
1/2 tsp red pepper flakes (optional)
1/4 cup sesame seeds
2 cups cooked rice
1 cup shredded carrots
1 cup shredded red cabbage
1/2 cup chopped green onions
1/4 cup chopped cilantro

Instructions:

1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, ginger, garlic, and red pepper flakes (if using).
2. Add chicken to the marinade and toss to coat. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
3. Heat olive oil in a large skillet or wok over medium-high heat.
4. Add marinated chicken to the skillet and cook, stirring occasionally, until chicken is cooked through and lightly browned, about 6-8 minutes.
5. Stir in sesame seeds and cook for another minute until fragrant.
6. While the chicken is cooking, prepare the rice bowl toppings. If using pre-cooked rice, warm it gently in a separate pan or microwave.
7. To assemble the bowls, divide cooked rice evenly among bowls.
8. Top with the cooked honey sesame chicken, shredded carrots, shredded red cabbage, chopped green onions, and chopped cilantro.
9. Serve immediately and enjoy!
