Total Time: 35 minutes
Ingredients
4 bone-in, skin-on chicken thighs
1/4 cup soy sauce
1/4 cup honey
2 tablespoons fresh ginger, grated
2 cloves garlic, minced
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon cornstarch (optional, for thickening)
Salt and pepper, to taste
Sesame seeds (for garnish)
Chopped green onions (for garnish)
Instructions
Marinate the Chicken
Prepare Marinade: In a bowl, whisk together soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil.
Marinate Chicken: Place the chicken thighs in a resealable bag or shallow dish, pour the marinade over, and let it marinate for at least 30 minutes (or up to overnight in the refrigerator).
Cook the Chicken
Preheat Oven: Preheat your oven to 400°F (200°C).
Sear Chicken: In an oven-safe skillet, heat a little oil over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off, and season with salt and pepper. Sear the chicken thighs skin-side down for about 5-7 minutes until golden brown.
Bake: Flip the chicken thighs skin-side up and pour the remaining marinade over them. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Make the Sauce
Thicken Sauce (Optional): If desired, remove the chicken from the skillet and place the marinade over medium heat. Mix cornstarch with a little water to create a slurry, then stir it into the marinade to thicken.
Serve
Plate the Dish: Serve the sticky ginger soy glazed chicken thighs hot, drizzled with the sauce, and garnished with sesame seeds and chopped green onions.
Tips and Variations
Serve with Rice: Pair with steamed rice or quinoa to soak up the delicious sauce.
