Gooey Peanut Butter Lava Cupcakes
Ingredients:
For the Cupcakes:
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, melted
¾ cup granulated sugar
½ cup brown sugar
2 eggs
1 teaspoon vanilla extract
½ cup buttermilk
For the Peanut Butter Lava Filling:
½ cup creamy peanut butter
¼ cup powdered sugar
For the Peanut Butter Frosting:
½ cup unsalted butter, softened
¾ cup creamy peanut butter
1 ½ cups powdered sugar
2 tablespoons milk
For Topping:
¼ cup melted chocolate
Chocolate chips
Directions:
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, mix melted butter, both sugars, eggs, and vanilla until smooth.
Alternate adding dry ingredients and buttermilk into the wet mixture, stirring until just combined.
Fill cupcake liners halfway with batter, add a spoonful of peanut butter filling in the center, and top with more batter.
Bake for 18-20 minutes or until cupcakes are set. Let cool.
Prepare frosting by beating butter and peanut butter until fluffy, then gradually adding powdered sugar and milk.
Frost cupcakes, drizzle with melted chocolate, and sprinkle with chocolate chips.
