Hawaiian BBQ Chicken and Pineapple Foil Packets 🍍🔥

Ingredients
For Chicken & Veggies:
4 chicken breasts or thighs (boneless, skinless)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ red onion, thinly sliced
2 cups pineapple chunks (fresh or canned, drained)
1 tbsp olive oil
Salt and pepper
1 tsp garlic powder
1 tsp smoked paprika (optional)
For Hawaiian BBQ Sauce:
½ cup BBQ sauce
2 tbsp pineapple juice
1 tbsp soy sauce or coconut aminos
1 tbsp honey or brown sugar (optional)
½ tsp ground ginger (or 1 tsp fresh)
Instructions
Preheat
Oven to 400°F or grill to medium-high. Oil grill grates if using.
Make the sauce
Mix BBQ sauce, pineapple juice, soy sauce, honey, and ginger in a bowl. Set aside.
Prep ingredients
Slice veggies and pineapple. Season chicken with salt, pepper, garlic powder, and paprika. Drizzle oil over veggies and pineapple.
Assemble foil packs
Place one chicken piece on each foil sheet. Top with veggies and pineapple. Spoon BBQ sauce over. Fold tightly into sealed packets.
Cook
Bake on a tray for 25–30 minutes or grill 20–25 minutes, flipping once, until chicken is cooked through.
Serve
Carefully open foil. Add optional toppings like green onions or sesame seeds. Serve with rice or quinoa and lime.
