For the Chicken 🍗
2 chicken breasts (cut into chunks)
1 tbsp olive oil
1 tbsp lemon juice 🍋
1 tsp garlic powder
1 tsp dried oregano
Salt & black pepper to taste
For the Bowl 🥣
1 cup cooked white rice 🍚
1 medium sweet potato 🍠 (peeled and cubed)
1 cup broccoli florets 🥦
2 lemon slices 🍋
1 tbsp chopped parsley 🌿
👩🍳 Instructions:
Toss chicken chunks with olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Let marinate for 10 minutes. Meanwhile, roast the cubed sweet potatoes in a 200°C (400°F) oven for 20 minutes until soft and slightly crispy. Steam the broccoli for 5–6 minutes until bright green and tender. Grill or pan-sear the marinated chicken on medium-high heat until golden and cooked through, about 6–7 minutes. Build the bowl: start with rice, then layer on sweet potatoes, broccoli, and grilled chicken. Garnish with parsley and lemon slices before serving.

Swap rice with cauliflower rice for a low-carb version.
