Grilled Veggie Bowl with Balsamic Vinaigrette
A healthy and flavorful vegetarian meal.
Ingredients:
For the grilled vegetables:
1 red bell pepper, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 onion, sliced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
For the grain bowl:
1 cup cooked quinoa or brown rice
1/2 cup chickpeas or lentils
For the balsamic vinaigrette:
1/4 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon honey
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Grill vegetables: Toss the vegetables with olive oil, salt, and pepper. Grill on a barbecue grill or in a skillet over medium-high heat, or until charred.
Cook grain: Cook the quinoa or brown rice according to package directions.
Make balsamic vinaigrette: In a small bowl, whisk together the balsamic vinegar, olive oil, honey, garlic, salt, and pepper.
Assemble: Layer the grilled vegetables, cooked grain, and balsamic vinaigrette in a serving dish.

Tips:
For a spicier dish, add a pinch of red pepper flakes to the vegetables or balsamic vinaigrette.
