Korean Fire Chicken Sandwich

Ingredients:

1 lb boneless, skinless chicken thighs
2 tablespoons gochujang (Korean chili paste)
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon sesame oil
1 teaspoon garlic, minced
1 teaspoon ginger, minced
Salt and pepper to taste
4 sandwich buns
For the Slaw:
2 cups green cabbage, shredded
1 cup carrots, shredded
1/4 cup green onions, chopped
1/4 cup mayonnaise
1 tablespoon rice vinegar
Salt and pepper to taste
Instructions:

Marinate the Chicken: In a bowl, whisk together gochujang, soy sauce, honey, sesame oil, garlic, ginger, salt, and pepper. Add the chicken thighs and coat well. Cover and marinate for at least 30 minutes (or up to overnight in the refrigerator).
Prepare the Slaw: In another bowl, combine the shredded cabbage, carrots, green onions, mayonnaise, rice vinegar, salt, and pepper. Toss until well combined and set aside.
Cook the Chicken: Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes per side, or until cooked through and caramelized on the outside. Let rest for a few minutes before slicing.
