Crispy Baked Chicken with Lemon Grass Marinade
So flavorful and tastes delicious!
Recipe:
3 chicken thighs with skin (about 3 pounds)
Marinade:
1/4 cup sliced lemon grass
6 cloves garlic
1 tablespoon grated fresh ginger
1/4 cup vinegar
1/4 cup sugar
2 tablespoons soy sauce
1 teaspoon black pepper
2 limes - for juice
1 tablespoon salt
Mix all marinade ingredients and blend into food processor till smooth. Set aside.
Basting:
1/4 cup Flavored oil (annatto seed)
2 tablespoons butter softened
Mix well.
Steps:
In a large bowl, add chicken and marinade with the premade sauce. Marinade for at least 1 hour.
Preheat oven to 375 F.
Pan sear the chicken in pan. About 3 minutes on each side. Then, transfer to a baking pan, line withth aluminum foil. Arrange chicken and baked for 50 minutes.
Brush the chicken with flavored oil after 30 minutes. Do it about 3 times. Let it rest forr 5-10 minutes before serving. Serve on top of rice. Enjoy!
